RECIPE OF ALOO GOBI

Ingredients

1 medium size cauliflower diced into florets 2 medium sized potato diced 1 tsp ginger paste 2 whole green chillies 1 medium sized tomato chopped A handful of boiled peas Some chopped coriander leaves 1 tsp turmeric powder ½.tsp Kashmiri red chilli powder A pinch of whole cumin seeds ½ tsp cumin powder ½ tsp coriander powder ½ tsp garam masala powder 2-3 tsp ghee 2-3 tbsp vegetable oil (approx) Salt and sugar to taste Some lukewarm water

HOW TO MAKE ALOO GOBI

Wash the cauliflower and potatoes in cold water. Pat dry with a kitchen towel. In a wok, add in some vegetable oil and shallow fry the cauliflower florets until they are a little soft but not mushy.Keep aside. Now in the same wok add some more oil and fry the potatoes till light golden and cooked.Keep aside. Now in the same wok add the ghee on medium flame. Temper it with a pinch of whole cumin seeds and green chillies. Now add in the ginger paste and cook till the raw smell subsides. Add in the chopped tomatoes and stir well. Now add in the turmeric, cumin and coriander powder one by one and braise well on medium to low heat. Sprinkle some lukewarm water in between to cook the spices well. When the spices are cooked, add in the boiled peas and mix it well with the spices. Now add the shallow fried cauliflower florets and potatoes into the wok and give it a gentle stir. Check the seasoning. Now sprinkle the garam masala powder and give it a nice stir. Pour in some lukewarm water and braise the vegetables and spices well. Cover the lid and put it on medium to high flame and let it simmer for 5 minutes. Check the desired consistency. If it's cooked through add in some coriander leaves and give it a gentle stir. Now pour in some ghee (optional) and switch off the flame. Serve it in a bowl and garnish it with some chopped coriander leaves.
